Swedish Fish Candy Sushi Treats (No Bake!)

Swedish Fish Sushi Candy Treats
Well, it's been awhile since my last post!  I've been in the throes.of a major life change, namely selling our house (successful!) and trying (unsuccessfully) to find a new one.  We're in a kind of limbo with renting a place and all of our personal items in boxes at a storage unit.  This includes all of my baking tools and decorating supplies.  Sigh.  The kitchen in our rental is straight from the 1970's collection, complete with avocado green tiles on the counter and dark brown hollow-door cabinets.  The gas oven is vintage 1972, and the temperature fluctuates by 50 degrees.  So, this means no baking for me, because I don't like to be surprised when I bake.  Waaahhhh!  :(

So I have been busy with a nail blog, because, let's face it, nail art is kind of like cake pops, just less calories.  I still frequent Pinterest, and yesterday I saw the most adorable NO BAKE project.  I decided to make up 50+ of these for my kids' Valentine's Day parties.  And it was super-duper-wow-I-can't-believe-how-cute-they-are easy!  Here's how to do it:

You'll need:
Rice krispie treats
Green fruit rollups
Swedish fish (the larger ones, not the tiny ones!)

I made a big batch of rice krispie treats for this, but you can half the recipe easily.

10 cups rice krispie cereal
1/2 cup butter
6 cups marshmallows
2 pinches salt
two teaspoons vanilla (or other flavoring you prefer)

Put the marshmallows, vanilla, salt, and butter in a big microwave-safe bowl.  Microwave on high for 2 minutes.   Stir until smooth.  Pour in your rice krispies and mix well.

There are rice krispie treats drying under this sheet of wax paper!
Divide up the mixture into two for easy shaping.  Line a 9x14 baking dish with wax paper, allowing about 2 extra inches to extend over the sides.  Pour half the mix into the dish.  With another large piece of wax paper, completely cover the top of the treats, and crush them all flat into the dish (it doesn't need to be perfect).  This way, you won't get any  mess on your hands while flattening them!   You want these to be about 1 inch deep in the pan.  Once you've flattened out your treats, simply lift them out of the pan with the wax paper to allow them to dry a bit.

Using a candy fish as a guideline for the size of the treats.
Cut your treats into small rectangles.  You want them to be just a bit larger than your fish.  Gently soften the edges and mold them into a slightly rounded rectangle.  Place a Swedish Fish on the rectangle.  Now for the wrap!

Using the treat as a guide to see how wide I need to cut the fruit strip.
If you use the fruit roll ups that come in one large circle, simply make 5-6 long cuts on the circle to make several 1-2 inch strips.  I used a knife to make my long cuts.  You could use a pizza cutter, and it would work just as well.  Take one of the strips and wrap it around the rectangle and fish.  Make sure the seam is at the bottom.  It should stick to itself.

And that's it!  There are other shapes of candy sushi you can make as well, but I didn't have time for this project.  These candy sushi treats are not only easy to make, but they look adorable as well.  The kids love 'em!

Since I don't currently have access to treat bags, I bagged each treat inside of a snack-sized baggie.  Presentation-wise, it's wasn't as pretty as I'd like it to be, but at least each one will stay fresh for the kids!

These were a really big hit at my kids' school.  The best part for me was that they didn't take that long to whip up, and they looked so flippin' adorable! Oh, and I didn't have to use that crazy oven of mine.  Give this recipe a try- you'll be glad you did.  Cheers!
